Tokyo 東京: Udatsu Sushi 宇田津 鮨

Udatsu Sushi is a simple and warm sushi restaurant located in the residential area behind the busy city of Nakameguro. The head chef or the owner Hisashi Udatsu hopes to bring his best world-class technique together with top-quality ingredients for his customers.
He created a restaurant with the modern concept of art x sushi. There is a main dining counter which can accommodate a maximum of 9 people. A more private dining that can fits about 2 to 4 peoples for family with children or a business engagement dinner is also available here for booking.
On second floor, there are both sub-counter (max of 5 people) and private room (4 to 8 peoples) available for special gathering booking too, however, the dishes will be prepared by Chef Udatsu's apprentice.
So lucky that we were able to get ourselves on the main dining counter - to have Chef Udatsu himself serving us.
Chef Udatsu always source the best fish from the new Toyosu fish market. While for his shari, he tends to use 2 types of Iio Jozo brewed vinegar, therefore, he will prepares 2 different batches of sushi rice which allows him to meticulously blend and contrast the taste profiles of each piece of fish and rice.

*Iio Jozo is a 120 year old vinegar brewery in Kyoto, Japan that still uses the traditional methods to produce high quality, pesticide-free rice vinegar from their own brewed sake.

Chef Udatsu was preparing all the neta ネタ for our sushi course.
Hot green tea was served.
Chef Udatsu not only expert in sushi but also an expert in sake as well. He can pair his creations well with seasonal sake sourced from various sake houses in Japan, therefore, you may ask him for good recommendations if you want to go for sake pairing in his sushi course.
